material : One cup soaked cowpea, one boiled potato, one onion finely chopped, two green chilies finely chopped, two teaspoons grated ginger, green coriander finely chopped, half teaspoon cumin, half teaspoon garam masala, salt as per taste, quarter teaspoon amchurna Red chili, quarter teaspoon, half teaspoon chaat masala and two teaspoon oil for baking the kebabs.

First of all, wash the cowpeas and wash them thoroughly. Now soak it in about 3-4 cups of water for overnight. Put the lobia in the cooker and bring it to a boil on medium flame. It will melt easily in one or two whistles. After this take it out in a steel sieve. Throw away its water and let the cowpeas cool down.
Now take the cowpea in a big bowl or layer and mash it well, along with this peel the boiled potatoes and mash them well. Now heat 2 tsp oil in a pan. When the oil becomes hot, add half a teaspoon cumin seeds to it. After the cumin splutters, add chopped onion and fry the onion for 2 minutes. After this, add grated ginger and fry for a few seconds.
Add mashed cowpea, mashed potatoes, salt as per taste, ground coriander, red chili powder, amchurna, garam masala and chaat masala to the roasted onions. Mix everything well. Fry in a pan till the water of cowpea gets dried up. Now add chopped coriander in it. Mix all the things once again and switch off the gas.
After the mixture cools down, make small kebabs like tikkis. You can give it any other shape if you want. Keep them covered in the fridge for some time. After about 20 minutes take out the kebabs. Now keep the pan on the gas for heating. Add little oil and cook the kebabs on medium flame. After it turns red from both the sides, serve it hot with green coriander chutney.
