Christmas is celebrated with great pomp all over the world. This festival is all about Christmas tree, Christmas carols, gifts, reindeer, lights and cakes etc. This day is celebrated on 25 December to commemorate the birth of Jesus Christ. This day is majorly celebrated by Christians around the world, but over the years people of different religions, traditions and beliefs also celebrate this day.
On this day you can take cake from any bakery. But making a cake at home for your loved ones on Christmas would be a better option. If you like to cook at home then you can try this recipe.

Dried cranberries – 150 grams
Raisins – 150 grams
Orange Zest – 2 tbsp
Butter – 150 grams
Crushed Cinnamon – 1 tsp ground
Eggs – 3
Vanilla Essence – 1 tsp
Cashew – 10
Chopped prunes – 200 grams
Lemon – 1
Orange juice – 150 ml
Maida – 200 grams
Clove Powder – 1/4 tsp
Baking Powder – 1/2 tsp
Brown sugar – 175 grams

Step – 1 Soak dry fruits in juice and preheat the oven
Combine cranberries, prunes and raisins in a large bowl. Add lemon juice, orange zest and orange juice to it. Soak dry fruits in juice overnight. Now preheat the oven to 160 degree centigrade. Grease the pan.
Step – 2 Boil the mixture of soaked dry fruits and then add flour and sugar to it
Pour the soaked dry fruits mixture into the pan, put the pan on the flame and let the mixture boil. Boil for 3-4 minutes. Take it off the flame and let it cool down. Mix flour and baking powder in a bowl. Keep it aside. In another bowl beat butter and sugar together. Add eggs and mix well.
Step – 3 Make the final batter for the cake
Now add cashew, vanilla essence, cinnamon and clove powder to the egg mixture and mix well. Add the dry fruit mixture along with the juice and flour mixture. Mix everything well. Pour the mixture into the baking dish. Spread it evenly with a spatula. You can use a circular or square dish for baking.
Step – 4 Bake the cake for 50 minutes
Bake the cake for 50 minutes. Leave the cake inside the oven for a few minutes. Take out the cake and let it cool completely. Remove the pan carefully and remove the parchment. Wrap the cake tightly with cling film and store it. Cut and serve.
