Malai Kofta Biryani

Creamy stuffed paneer koftas with homemade spices and tossed in velvety saffron chutney. With a soft texture on the inside, these balls melt in your mouth and make you feel more drawn towards it. This is a famous recipe of Biryani in which ‘Dumpukht’ flavored Basmati rice is topped with delicious Malai Koftas. Here is the recipe to make this dish that you should know.

Follow this easy recipe to make delicious Malai Kofta Biryani-


for kofta

One and a half cup grated cheese

2 medium sized potatoes (boiled and mashed)

Ginger chopped 1 tsp

Green chili finely chopped 1 tsp

Kashmiri red chili powder 1 tsp

garam masala powder one and a half tsp

Besan (light roasted) 1/4 cup

salt one and a half teaspoon

oil for frying

Golden raisins chopped 6-8 nos.

Cashew nuts broken 4-5 pieces

for curry

Desi Ghee 2 tbsp

bay leaf 2 nos.

cinnamon stick 1 inch

Green cardamom 3 pods

black cardamom 2 pods

Clove 6-7 nos.

cumin 1 tsp

medium onion chopped 2

Ginger garlic paste 2 tsp

Green chilies chopped 3

Kashmiri red chili powder 3 tsp

1 cup whipped curd

salt one and a half teaspoon

water one and a half cup

Cream 2 tbsp

rose water 1 tsp

for rice

Fine grained Basmati rice (soaked for 60 minutes) 500 grams

water 8 cups

Desi Ghee 1 tbsp

salt one and a half teaspoon

For Dum Rice

Sliced ​​medium onion deep fry 2

Coriander chopped 4 tbsp

Mint 4 tbsp

Saffron soaked in milk 3-4 strands in 2 tbsp milk

rose water 1 tbsp

kewra water 1 tbsp


Desi Ghee 1 tbsp

Cashew nuts 2 tbsp

Raisins 2 tbsp


fry koftas

1. In a large bowl add grated paneer, mashed potatoes, chopped ginger, green chili, red chili powder, garam masala powder, roasted gram flour and salt and mix well.

2. Make small balls and put chopped raisins and cashews in it.

3. Heat oil in a pan and deep fry the paneer kofta balls till they turn light golden.

4. Remove the extra oil and keep it aside.

For Kofta Curry

1. First of all, heat desi ghee in a big pot and temper it with all the spices.

2. Now add chopped onions and fry on medium flame for 7 minutes till the onions become mushy and light golden brown in color.

3. Then add ginger garlic paste and fry on medium flame for 5 minutes.

4. Keeping the flame low, add red chili powder and curd and cook on low flame till the oil separates from the slides.

5. Add salt and mix well. Add water and combine to consistency.

6. Add cream and rose water and keep stirring occasionally on low flame.

7. Now add fried paneer balls and toss lightly.

8. Switch off the flame and keep it aside.

for rice preparation

1. Pour double the amount of hot water rice in a large pot.

2. Add a few drops of desi ghee and a little salt.

3. When the water starts boiling, add soaked and filtered rice and let it cook on high flame till the rice is 80 percent cooked.

4. Drain the water and strain the rice through a sieve.

5. Spread it on a tray to separate the grains.

6. Cook Dum of rice.

7. The next step is to cook the biryani rice in dum.

8. Heat a flat-based iron griddle on the burner and place a copper plate on it.

9. Now spread a layer of rice evenly on top.

10. Add chopped coriander, mint and fried onions.

11. Add saffron soaked milk, rose and kewra water.

12. Repeat the layering process with rice only. Seal the copper vessel with flour and put a lid on it and press it from all sides.

13. Let the biryani rice cook in dum for 20-25 minutes. Rest for another 10 minutes.

14. Serve hot biryani rice with kofta curry, garnish with roasted raisins and cashew nuts. Serve Burani Raita and Lachha Onion together and enjoy.
