Roti Cooking Cancer: Roti is one of the most important food cooked in Indian homes. But the way of cooking bread is different in every house. Some people make it by roasting it on both the sides. So on the other hand, some people cook it half cooked on a pan and make it on direct flame with the help of tongs. Most of the people believe that this changes the taste of roti. But you will also be surprised to read the research that has come out regarding making roti.
However, some studies indicate that high-temperature cooking methods produce heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs), which are known carcinogens.
What came out in the research
According to research published in the Journal of Environmental Science and Technology, natural gas stoves and cooktops emit air pollutants such as carbon monoxide, nitrogen dioxide, and such small particles, which are considered unsafe by WHO. Along with respiratory diseases, there is also a risk of cancer and heart diseases.
Not only this, but a study published in the Nutrition and Cancer Journal has revealed that cooking food at high temperatures can produce carcinogens. In such a situation, the question arises that do we make bread in the right way?

According to a report published in 2011 by Dr. Paul Brent, Chief Scientist at Food Standards Australia and New Zealand (FSANZ), when bread comes in direct contact with gas flames, it produces a chemical called acrylamide. When food is cooked in direct flames of gas, carcinogens are produced, which are dangerous for the human body.
